It is no longer necessary to go halfway around the world for a tasty Thai chicken salad. Bring exotic tastes home with this recipe that combines crisp, colorful vegetables with grilled chicken, honey roasted peanuts, and noodles, topped with a homemade spicy peanut and lime dressing.
The best way to make this recipe is by preparing the Thai peanut dressing first. Make the dressing ahead of time so it can chill in the refrigerator for a few hours which allows for all its intense flavors to blend. It's also a nice time saver to have it already prepared, especially if entertaining guests.
Spicy Thai Peanut Dressing
Ingredients:
- 1/4 cup peanut butter
- Juice of one lime
- 1 clove of garlic, minced
- 2 tablespoons of honey
- 1 1/2 teaspoons of sesame oil
- 1 tablespoon of soy sauce
- 1 tablespoon of rice wine vinegar
- 1/4 cup water
- 1/4 cup vegetable oil
- 1 teaspoon of fresh ginger, minced
- 2 tablespoons of fresh cilantro, chopped
- 1 1/4 teaspoons of Sriracha sauce
- pinch of sea salt
Directions:
- Combine all ingredients in a blender.
- Blend until a smooth consistency is reached.
- If dressing is too thick, add more water, one tablespoon at a time until the desired consistency is reached. Do not add too much water or dressing will be too thin.
- Pour the dressing into a glass mason jar or salad dressing container and chill in the refrigerator for 2-3 hours.
Taste the dressing, and if necessary, add more Sriracha sauce to increase the spiciness or add more honey to increase the sweetness. The flavors in this dressing are strong, but they can be adjusted to suit individual tastes.
Thai Chicken Salad with Noodles
Ingredients:
- 2 cups mixed greens, chopped
- 1 scallion, thinly sliced
- 2 cups grilled chicken, chopped
- 1/4 cucumber, julienned
- 1/2 carrot, julienned
- 1/4 red bell pepper, julienned
- 1/4 yellow bell pepper, julienned
- 1 cup purple cabbage, thinly sliced
- 1/3 cup honey roasted peanuts
- 6 oz linguine, cooked and drained
- Thai peanut dressing
Directions:
- In a large bowl, add mixed greens, scallions, grilled chicken, cucumber, carrots, red bell pepper, yellow bell pepper and purple cabbage.
- Using tongs, combine the vegetables and grilled chicken together well.
- Place the cooked linguine noodles on top of the salad.
- Sprinkle the top of the salad with the honey roasted peanuts.
- Add the desired amount of Spicy peanut dressing and toss it all together until well combined.
Once this salad is assembled, spoon it onto individual serving plates for each guest. For added embellishment place a lime wedge, a few sprigs of cilantro and a few honey roasted peanuts right on top of each plate of salad.
